1. Preheat the oven to 260 degrees with a counter in the middle of the oven. In a medium bowl, combine water and salt, stirring until the salt dissolves. Peel and cut the potatoes in very thin slices, about 1.5 mm thick. Put the potato slices in salted water so that they do not oxidize and do not turn brown.
