How to cook it properly
The main role is given to the correct selection and preparation of products. Without this dish will not get as tasty and airy as it should be.
- Choose a liver. You can make a cake of pork liver, because it is juicy and tender. If you prefer beef, be sure to pay attention to the color. It should not be too dark. Suitable and chicken, it is cheaper, but the taste will turn out to be more gentle.
- Before cooking, cut off all veins and films from the product. They will start to get stuck in the meat grinder when shredding, and if they get into the finished dough, neither you nor the guests will be pleased to take a long strip of fat out of their mouths.
- About the pancake test, we'll talk a little later. And now we will pay attention to the process of preparation. The liver does not like prolonged heat treatment, and if you overdo it in a skillet, the food will be stiff.
- Correctly choose the temperature mode. It is better to cook on medium heat. We explain why. When a powerful flame is burning under the frying pan, the pancake will quickly grasp the crust, but inside the dough will remain moist. And on a very small fire the dough will not have the shape of a pancake and will begin to fall apart in your hands.

The recipe for a delicious liver cake
So, you have to divide the ingredients into those that you need for the test and separately for refueling.
For the test, take:
- liver (any) - 500 g
- eggs - 2 pcs.
- sour cream 150 g
- flour - 0.5 cups
- salt pepper
Filling:
- mayonnaise - 300 g
- garlic - 3 cloves
- carrots - 5 pcs.
- onions - 3 pcs.
- greens for decoration
Cooking procedure
- The liver is carefully mine, along the way clearing of all excess veins. We discuss with a towel and send it to the meat grinder. To make the future dough more airy, you can additionally whip the twisted meat blender.
- We add eggs, flour, sour cream, salt and pepper. Gently mix the dough so that no lumps form in it.
- We heat the frying pan and pour out the mixture with the ladle. Try to spread it evenly thin layer on the surface of the vessel.
- Meanwhile, finely chop the onions and three carrots. Lightly fry the vegetables to soften them, and the onion becomes transparent.
- Garlic is passed through the press and mixed with mayonnaise.
- Prepare a dish in which to serve a hepatic cake. When the first pancake is ready, lay it on a plate and lubricate with mayonnaise. Top with vegetables.
- We do the same procedure with each pancake. Some between the cakes are also spreading the Bulgarian pepper.
Other options
We brought the simplest and most common recipe, but the imagination of the cooks has long come up with some ways to make the dish more diverse and interesting.
- if the dough to add a glass of milk, the cake will turn out more satisfying and light.
- sometimes between pancakes from the liver lay out the usual, prepared from milk with flour and eggs. Then the usual salad becomes striped in a cut, and the delicate taste of the dough makes the dish and at all exquisite.
- gourmets can be advised to spread between the cakes prunes, fried champignons or other ingredients that will only prompt your gastronomic taste and imagination. Some even add favorite berries.
