Puff pastry with cinnamon and cheese cream, recipe with photo
To make buns you will need:
- milk - 200 ml
- dry yeast - 1 sachet
- Butter - 200 g
- sugar - 100 gr
- brown sugar - 200 g
- powdered sugar - 150 gr
- cinnamon - 20 gr
- eggs - 2 pcs.
- flour - 800 gr
- vanilla - 1 packet
- salt - 0.5 tsp.
- Philadelphia cheese - 100 g
- gluten - 1 tbsp. l.
- Butter must be melt in a microwave or on a water bath until soft.
- Mix until smoothly milk, yeast, 100 gr. sugar, vanilla and 3 tbsp. l. butter. In a separate tank, beat the eggs to a light foam. Eggs must be necessarily warm, so beforehand get them out of the refrigerator. Pour the egg mixture into the bulk and bring it to a homogeneous state.
- In a separate container, mix the flour and salt. Pour the flour into the bulk and mix. Add gluten (take a little flour and water, mix until a viscous gruel is formed).
- Add flour to the bulk until a dough forms which will not stick to your hands. Cover it with a towel and leave for an hour.
- Roll the dough into a thin layer, about 40 by 50 cm in size.
- Lubricate the dough with butter and evenly sprinkle with a mixture of cinnamon and sugar.
- Roll the dough into a tight, even roll. With a sharp knife or a line, cut the roll into 5 cm portions.
- Cover the pan with parchment paper and place the buns upwards. Send them to a preheated 180 degree oven for 20 minutes.
- While the buns in the oven - prepare a cheese cream. To do this, mix the remaining oil, vanilla, powdered sugar and softened Philadelphia cheese. The mass should be uniform and glossy.
- Stir-fried ready-made French rolls get out of the oven and cover with cheese glaze.
