Soup with spinach Green soup with spinach, very delicate and delicious! Spinach gives it a silky texture (thanks to the fact that we beat the fresh spinach leaves, and then add the spinach puree to the soup), and the chicken meatballs are full of flavor and aroma! Also in this soup you need to add a lot of other greens - parsley and green onions!
Ingredients:- Chicken mince 400 g
- Potatoes 4 pcs.
- Spinach fresh 300 g
- Onion white 1 pc.
- Carrot 1 pc.
- Eggs chicken 1 pc.
- Parsley fresh 0.5 bunch
- Green onions 0.5 bunch
- Salt 1 tsp.
- Pepper black ground 2 pinch
- Olive oil 4 tbsp. l.
- Step 1 To make soup with spinach and chicken meatballs we will need chicken mince, potatoes, fresh spinach, onion white (or onions), carrots, chicken egg, green onions and parsley, salt, black ground pepper, olive oil.
- Step 2 Clean potatoes, onions and carrots. Potatoes cut into cubes, chop the onions, and cut the carrots into thin fine straws.
- Step 3 Pour the water into the pan and set the potatoes to boil.
- Step 4 While the potatoes are brewed, spinach leaves and chop.
- Step 5 Put them in the bowl of the blender. We pour a couple of tablespoons of boiled water and add a pinch of salt (so that the leaves get better).
- Step 6 Whisk at high speed until smooth mashed.
- Step 7 In the chicken forcemeat, drive the egg, salt and pepper it, mix it.
- Step 8 From the stuffing we form small round meatballs.
- Step 9 When the potatoes are half ready, put the meatballs in the saucepan. Stir, give a boil, reduce heat and cook on low heat under the lid.
- Step 10 Fry onion and carrots on olive oil.
- Step 11 In a bowl of spinach puree pour a couple of ladles of broth (chicken or soup). Stirring.
- Step 12 When the meatballs and potatoes are ready completely, pour in the soup spinach puree.
- Step 13 Stir, give a boil, salt the soup to taste and lay the roast of carrots and onions. Stirring.
- Step 14 Chop the parsley and the green onion, pour it into the soup, let it boil again, add the black ground pepper and remove the pan from the fire.
- Step 15 We serve soup in the hot form as the first dish.
