Stuffed eggplant in Armenian style

Onions are cleaned, eggplants and peppers. We clean the eggplants as shown in the photo. Fry the peppers and eggplants entirely until soft. In parallel, in another pan, simmer onions and minced meat. Examine for 15 minutes on medium heat, at the end salt and pepper to taste. The second onion finely chopped and fried in butter until transparent. Then add the tomato paste and greens to the onion. Stir, quench 2-3 minutes - and remove from heat. Fried eggplants are cut along, making a kind of pocket. Stuff the eggplant with minced meat, fried with onions. We spread the stuffed eggplants in the baking dish, put in the same roasted peppers, pour all the tomato paste with onions and herbs - and into the oven. Bake for 20 minutes at 180 degrees.
