We boil potatoes in a uniform. We clean and cut. Chop the onion and cucumber, mixed with potatoes. Slightly heat the broth, add the vinegar, 4 tbsp. tablespoons of butter and mustard. The mixture is filled with vegetables. Let stand for about 30 minutes. Rinse the beef tenderloin, pass through a meat grinder with onions. Soak the loaf in milk and squeeze. Mix with minced meat, add eggs, salt, pepper to taste. We make cutlets and fry them in a mixture of vegetable and butter on each side. We serve cutlets to the table with a vegetable garnish, we decorate with greens.
