Cooking berlinery In any supermarket among the baked goods you can meet donuts "Berliner" with a filling of fruit jam, boiled condensed milk or cream, covered with chocolate glaze or powdered sugar. For lovers of home cooking, I suggest a recipe for such donuts with jam. Berliners are considered a traditional German pastry for festive evenings. There is a playful custom, filling one of the donuts with mustard, you can use any stuffing, without limiting your imagination.
Ingredients:- Milk 500 ml
- Eggs chicken 2 pcs.
- Wheat Flour 900 g
- Butter 100 g
- Yeast, dry 11 g
- Sugar 3 tbsp. l.
- Berry jam 200 g
- Vanillin 1 pinch
- Water 100 ml
- Sunflower refined sunflower oil 500 ml
- Salt 1 tsp.
- Step 1 For donuts with a filling you will need: flour, milk, water, eggs, butter, yeast, salt, sugar, vanilla berry jam and sunflower oil for frying.
- Step 2 In warm water, stir the yeast and sugar.
- Step 3 Add the melted butter, eggs, warm milk, salt and vanillin to the mixture. Whisk everything with a mixer until smooth.
- Step 4 When mixing the dough, gradually add as much flour as possible to make it soft, but not sticky to the hands.
- Step 5 At room temperature, away from drafts, leave the dough for 1 hour and 40 minutes. It should increase in volume by a minimum of 2 times.
- Step 6 Roll the layer 1.5 cm thick and use a glass to cut out the circles of the desired diameter.
- Step 7 Put the donuts on a floured board at a sufficient distance from each other and leave to settle, until they increase in volume by 2 times.
- Step 8 In a frying pan with a thick bottom and high walls, pour the sunflower oil 2-3 cm high and warm it enough, fry the donuts for about 2 minutes on each side, until they blush.
- Step 9 After frying, place the donuts on a paper towel so that excess fat is absorbed. When donuts cool down to an acceptable temperature, make a hole on the side, fill them with jam using a pastry syringe or a bag. Sprinkle with powdered sugar before serving.
