Cake "Smetannik" Awesome cake! Cakes based on sour cream are soft, lush, each of the four crusts contains its own additive - prunes, poppy, hazelnuts, cocoa powder, this makes the taste of the cake multifaceted and rich, and two excellent creams - sour cream and oil-coffee simply perfect for a layer of cake! This cake I did on the birthday of my beloved sister, we all liked him very much! But no matter how hard we tried, it was not possible to overpower the cake for one day, because it turns out to be huge, more than two kilograms, and, by the way, its taste, the day after cooking, became even better! In general, I highly recommend you try this miracle for the New Year (and not only) holidays, you will not regret it!
Ingredients:- Eggs of chicken 4 pcs.
- Flour, wheat 350 g
- Sour Cream 400g
- Sugar 350g
- Prunes 50g
- Hazelnut 50 g
- Cocoa powder 2 tbsp. l.
- Poppy 2.5 tbsp. l.
- Baking Powder 12g
- Sour cream 250 g
- Sugar powder 130 g
- Butter 300 g
- Eggs chicken 2 pcs.
- Sugar powder 200 g
- Beiliss 40 ml
- Coffee instant 15 g
- Milk chocolate 100 g
- Cream of 10 ml
- Cocoa powder 3 tsp.
- Beiliss 80 ml
- Step 1 For the cakes we need the following products: chicken eggs, wheat flour, sugar, sour cream not less than 15% fat, baking powder, cocoa powder, hazelnuts, prunes, poppy. To decorate and impregnate the cakes take the liqueur Baileys (or sugar syrup), milk chocolate, cream fat (or a piece of butter for making chocolate icing), cocoa powder.
- Step 2 For sour cream, take the fatty sour cream (I always buy sour cream not shop, but homemade, it's very thick cream) and sugar powder. For oil-coffee cream: butter, chicken eggs, instant coffee, Baileys liqueur (or sugar syrup), powdered sugar.
- Step 3 Now, let's get started! First we prepare the cakes. Dough for 4 cakes we prepare one, and then we will divide it into four parts and add the necessary additives. For the test, we combine eggs and sugar.
- Step 4 Whisk with a mixer until a white lush mass is obtained.
- Step 5 Add the sour cream.
- Step 6 Whisk again.
- Step 7 We sift the flour together with the baking powder and in several steps we put it into the dough, whisking it continuously at low speed.
- Step 8 The dough is ready to be divided into 4 pieces for the cake.
- Step 9 Now prepare the additives. Fried hazelnut is cleaned, put into a mortar.
- Step 10 Grind into a large crumb. If there is no mortar - no problem, beat the nuts with a rolling pin!
- Step 11 Prune the prunes with hot water and cut into small pieces. If prunes with bones - be sure to remove them.
- Step 12 The dough is divided into 4 parts. In each container with the test we add different fillings: cocoa powder, hazelnuts, prunes, poppy seeds. Thoroughly we add additives in each part of the test.
- Step 13 Bake in turns 4 cakes - chocolate, poppy, nut and prunes. Bake in a preheated to 200 ° C oven for 12-15 minutes. For baking, I use a silicone mold with a diameter of 24 cm, it does not lubricate anything, the cakes do not stick, but you look at your shape, if you need to oil it before spreading the dough - lubricate.
- Step 14 When the cakes are ready, we impregnate them with liqueur or any syrup.
- Step 15 We prepare the oil-coffee cream. To do this, connect the eggs and sugar powder and beat until a white lush mass is obtained.
- Step 16 In the liqueur we dissolve the coffee, we introduce it into the egg-sugar mixture. Beat.
- Step 17 While continuing to whisk, add small amounts of soft butter.
- Step 18 The oil-coffee cream is ready!
- Step 19 Now prepare sour cream, everything is simpler here! We combine sour cream (just do not forget, you need a very, very fatty sour cream!) And powdered sugar.
- Step 20 Beat the mixer at high speed. Sour cream is ready!
- Step 21 So, the cakes are ready and soaked, both creams are also ready, it's time to start assembling the cake! At the bottom of the demountable form of a 24 cm diameter we spread the chocolate cake.
- Step 22 Separate butter and coffee cream into 2/3 and 1/3 parts. Leave less (it will be needed later). Half of the remaining cream is spread on the chocolate cake and leveled.
- Step 23 Next, lay out the cake with hazelnuts.
- Step 24 On it half the sour cream. We level.
- Step 25 Next is the cake with prunes.
- Step 26 On the cake with prunes we spread the remaining half of the oil-coffee cream. We level it.
- Step 27 The last cake is poppy.
- Step 28 Cover the surface of the poppy cake with an even layer of the remaining sour cream. We put the cake in the refrigerator for at least one hour - brew and soak. The surface can be tightened with food film.
- Step 29 After this time, take the cake from the refrigerator, remove the side of the detachable shape.
- Step 30 Cover the sides of the cake with the previously left part of the oil-coffee cream. We sprinkle cocoa powder around the perimeter of the cake, so that the sides are sprinkled.
- Step 31 Melt the milk chocolate and cream (or a small piece of butter) in a microwave oven or on a steam bath, and make a grid of the resulting chocolate glaze on the surface of the cake. We put the cake in the refrigerator for at least 2 more hours, and only then serve it to the table! But from my own experience I will say that the next day the cake is even more delicious! Keep it in the refrigerator! Very, very tasty!
