Pasta Day - all year round The Italian name for pasta (translated into Russian as dough) sounds like pasta (Italian Pasta), but in Russia this word has a completely different meaning. The history of the appearance of pasta is ancient and confusing. But we are used to associate paste with Italy. In the Italian cuisine, pasta with sauces became very popular. There is even a culinary holiday - the World Pasta Day (October 25). Why this day? The date is chosen in honor of Christopher Columbus - the famous pasta lover. On this day in all restaurants prepare classic dishes from pasta and experiment, creating new sauces and varieties of dishes. In the menu today, a popular cannelloni dish, but we will not cook in a common tray, as is customary, but portionwise. To do this, we will have to cut the tubes, and you can lay out portions in different ways: horizontally or vertically, see by the presence of dishes. The taste of the dish depends on the sauce, which will fill the cannelloni. Experiments in combination of sauce components are welcome.
Ingredients:- Cannelloni 200 g
- Chicken mince 200 g
- Pork forcemeat 300 g
- Onions 1 pc.
- Eggs chicken 1 pc.
- Mushrooms, white, dried 20 g
- Cheese Parmesan 50 g
- Butter 10 g
- Pepper black ground 2 pinch
- Salt sea 2 g
- Cheese Parmesan 60 g
- Wheat flour 2 tbsp. l.
- Butter 10 g
- Milk 500 ml
- Nutmeg 2 gr
- Black pepper powder 2 g
- Salt sea 2 g
- Step 1 To prepare cannelloni, take lean pork forcemeat and mix with chicken, onion, egg, dried mushrooms, Parmesan cheese, butter, salt, pepper. For cheese sauce, prepare milk, butter, flour, cheese, salt, pepper, ground nutmeg.
- Step 2 Soak the mushrooms in the water.
- Step 3 Cut the onions and water mushrooms.
- Step 4 Spice the onions, add mushrooms and fry in butter for 3-4 minutes.
- Step 5 Add the mince, stirring all the time, keep the frying pan on fire for another 7-10 minutes. Salt and pepper. Remove the minced meat from the fire, cool it and roll it on the pulser mode a couple of times in the blender.
- Step 6 Grate Parmesan cheese on a fine grater.
- Step 7 Stuff the stuffing in a comfortable dish, add cheese and egg to it. Stir thoroughly. The filling is ready.
- Step 8 Boil cannelloni: throw into boiling water and cook all the time stirring (can stick or crack) for 4 minutes. Cut each tube into 2 pieces.
- Step 9 Stuff the tubes with minced meat and put or put in a portioned baking dish.
- Step 10 Prepare the cheese sauce. Fry the flour in a butter until golden.
- Step 11 Add the milk in portions, stirring constantly (do not rush), so that there are no lumps. In the dairy mass, add cheese, salt, pepper, ground nutmeg. Again, mix everything and hold the sauce on the fire until it thickens. The sauce should not be very thick. If necessary, add more milk.
- Step 12 Pour the resulting cannelloni sauce, sprinkle with cheese.
- Step 13 Put the portions into a preheated oven and bake for 30-35 minutes at 180 ° C.
