We prepare the fish - we clean it from the scales, we extract the insides. On finished fish carcasses, we make transverse incisions. Then fish marinate for about half an hour in salt, pepper and spices. Carcasses should be thoroughly rubbed with them. Salo cut into cubes. In the sleeve we lay fish, we add fat to it.
