Rinse the mango and cut into pieces. Pour the red pepper flakes in the oil until they are slightly darkened. Add the chopped onion. Fry until soft. Peel the ginger and rub it directly into the onion. Stir the mixture well, and bring to a boil. The mixture should simmer for about an hour. Periodically stir. The liquid will gradually go away and there will be a consistency of jam. When using raisins, add it to the end of the cooking time (about 45 minutes). Serve hot or cold.
