Preheat the oven to 175 degrees. Put the nuts on a baking sheet and bake in the oven until golden brown and the appearance of flavor, tossing occasionally, from 5 to 8 minutes. Allow the nuts to cool completely. In the food processor combine the toasted pine nuts, basil, parmesan and garlic, season with salt and pepper. While the combine is working, slowly add olive oil. Beat the mixture until smooth. If you do not use the sauce immediately, cover it with a plastic wrap and put it in the fridge - this will help the sauce to keep the color bright. Pesto sauce can be stored for up to three days.
