In recent years, she steadily holds the leading position in the rating of culinary hits of Northern Italy, Slovenia, Austria, Switzerland ... Pumpkin is a rich source of vitamins and carotene, therefore it is especially useful for people with cardiovascular problems. A special mention is the pumpkin oil. It contains a lot of substances that have a beneficial effect on the human body, and still has an exquisite taste and aroma. Europeans, this delicacy is just crazy! Pumpkin soup with shrimps

For 4 people.

Cut the pumpkin into cubes, sprinkle a little and leave to let it drain (so it will be fried faster). Cut the leeks and onions, chop the carrots and celery root and fry all in butter. When the onion becomes clear, add the pumpkin and simmer for 15-20 minutes. Pass through the blender, place in a saucepan, add 1.5 liters of water and bring to a boil, removing the foam. For more nutrition, you can add cream. Lightly fry the shrimps in a frying pan in a small amount of olive oil. When the fragrance goes from the shell, add the chopped garlic into the pan and put it all in the soup. Immediately remove the pan from the fire so that the shrimps are not digested. Add salt and pepper to taste. Spread the prawns on plates, spill soup and - the main secret - in each plate add 1 teaspoon of pumpkin oil. It will give the dish an unusual flavor.

There are many different varieties of pumpkin - large-fruited, solid-root, nutmeg, and they are prepared the same way. Pumpkin is a dietary product. Those who are not satisfied with her solo performance, can easily pick her a partner for the duo. So, probably, many are well aware of the subtle and exquisite combination of pumpkin with meat. However, the pumpkin allows for any improvisation: you can combine it with chicken, fish, seafood, in particular with scallops or shrimps. Pumpkin pie

Scrub the pumpkin on a large grater and put the stew in butter, on medium heat, to slowly evaporate the juice. Prepare the short dough. Whisk egg yolks with sugar powder until white mass is obtained. Add 250 g of soft butter and mix it all in a mixer. Transfer to a bowl, pour in the flour and mix the dough: it should not turn out to be too soft and not too dense. Roll it with a rolling pin to a thickness of about 7-8 mm (sand dough lovers can roll out and thicker) and clothe the bottom and sides of the pie shape. When the pumpkin evaporates water, cool it, add sugar, raisins and grated cookies (raisins and cookies absorb excess moisture). Fill the resulting mass with the dough form, from above make a lattice of dough strips. Put the cake in an oven with a temperature of 150 C for three hours, so that it is dried rather than roasted. Cut the finished pie into pieces, put them on a dish and decorate with powdered sugar. You can sprinkle a cake of grated chocolate or pour chocolate glaze and serve ice cream. And, in essence, you can add whatever you like. Improvise!
