Cottage cheese fillings I like the most different. In addition to just sweet cottage cheese, such combinations are very tasty: cottage cheese with poppy seeds, vanilla, cottage cheese with dried apricots and prunes, with fresh berries and fruits, as well as canned berries and fruits, nuts, coconut shavings and others. To supplement the curd filling to these patties, I used lemon zest. The dough for cottage cheese pies can also be of the most diverse types: yeast, puff, sand, etc. I suggest taking note of the curd-short pastry, which is also very suitable for making other sweet or unsweetened pies.

- Step 1 To make a curd-sand dough, you need flour, cottage cheese, butter or cream margarine, eggs, sugar, salt and soda.

- Step 5 Combine the flour with salt and soda (do not extinguish soda, it will react with the lactic acid of cottage cheese) and add to the sweet curd-butter mass.
- Step 6 First, mix all the ingredients with a spatula or spoon into a loose mass.
- Step 7 Then quickly mix the dough and leave it in the fridge for half an hour.
- Step 8 While the dough cools, prepare the filling from the cottage cheese, eggs, sugar and lemon.
- Step 9 With the lemon, peel the peel with a hot or special appliance. Then simply connect the ingredients of the filling and mix them in a blender or manually with a fork or a crush for mashed potatoes.
- Step 10 Cut the dough on a flour-padded surface into 15 identical pieces.
- Step 11 Each piece of dough roll into a cake with a thickness of about 5 mm, put in the middle about 1 tablespoon of filling and protect the edges.
- Step 12 Place the patties a short distance from each other on a greased baking sheet, silicone rug or baking paper.
