Count's treats

Sometimes, a person lives without thinking about great deeds, and his name suddenly enters into history unexpectedly. This happened with the Governor-General Alexander Grigorievich Stroganov (1795-1891). An educated man, he was a famous Odessa philanthropist, he gave the University of Tomsk a large library that had been collected for more than two hundred years by his ancestors. With his direct participation, the University of Odessa was established, once called. But we regularly commemorate Stroganov not in glorification of his human actions, but in reading the menu in the restaurant.

There are several versions of the emergence of a dish, called "befstroganov" - "beef in a Stroganov style." One of them says that, like Pavel Mikhailovich Tretyakov, who opened the doors of his house, so that students-artists could see his collection of paintings, Alexander Grigorievich started the fashion for "open tables" to support the people of science. Any student or even just a neatly dressed young man could have a snack at his house for free. It is rumored that, for some economy, the clever French chef came up with a dish that was easily divided into portions and served with sour cream sauce in French saucer. Calorie and at the same time tasty, it allowed poor students to prolong their craving for science. According to another legend, describing Count Stroganov as a hospitable host and a visionary politician, during one of the balls that the count was giving, a messenger from the tsar arrived at the very end. Since the meal was long over, there was nothing in the kitchen that was hot, ready to serve the guest. Nothing but scraps of meat, which the quick-witted cook cut into small pieces and filled with the remnants of sour cream. The messenger was flattered by attention and recipe and in the stories he called this dish by the name of Count Stroganov.

What does "Beef Stroganoff" look like? Looking into the well-known Soviet "Book about tasty and healthy food", we learn that it is not from the scraps that the dish of the count's status is prepared! "Beef stroganoff - sliced thin slices weighing 5-7 grams of beef tenderloin. The frying takes only 3-5 minutes. Very little time is needed for further extinguishing ... "However, this is not the only way to prepare this dish. To see this, it's enough to visit several restaurants. Many cooks bravely experiment with beef in a Stegangan style, introducing new ingredients into the dish. Gourmets have only one thing: try as many varieties and choose the one that they like most.
