Christmas cookies I always thought that a crunchy biscuit could only come from having a significant amount of butter or fat in the dough. It turns out that "crunchiness" can give a significant amount of yolks. Cookies from the specified number of ingredients are not very much, so on the eve of the holidays it is better to make a double portion (I all ate very quickly even without glaze)!
Ingredients:- Wheat flour 1 tbsp.
- Vodka 5 ml
- Baking Powder 0.5 tsp.
- Orange 1 pc.
- Cinnamon ground 0.5 tsp.
- Butter 20 g
- Eggs chicken 2 pcs.
- Sugar powder 0.25 tbsp.
- Sugar powder 200 g
- Eggs chicken 1 pc.
- Lemon 0.5 pcs.
- Step 1 To prepare the cookies you need flour, sugar powder, eggs, butter, cinnamon, orange (peel), lemon (juice), baking powder and vodka (or cognac).
- Step 2 Separate the proteins from the yolks. Mix the yolks with butter and sugar powder.
- Step 3 Add 2/3 cups of flour, cinnamon, baking powder, vodka and 1 tbsp. l. orange peel. Knead the dough.
- Step 4 Pour the remaining flour onto the work surface and mix it into the dough. Put the dough for 30 minutes in the refrigerator.
- Step 5 Roll the dough into a layer 2-3 mm thick and cut out the shape or the patterns of the biscuits. Put on a baking sheet covered with parchment paper.
- Step 6 Bake for 10 minutes in a preheated oven to 160 ° C until light brown. Ready cookies to cool.
- Step 7 For the glaze, whip the protein into a firm foam.
- Step 8 Add a powder of sugar by a teaspoonful. When the mass becomes thick and shiny, add the juice of half a lemon. Once again, shake well. If desired, you can add food colors (I add a little cherry jam, the result is a gently pink color).
- Step 9 Apply the glaze to the biscuits and dry for 15 minutes in a slightly heated oven (I turned on the ventilation mode and set the temperature at 50 ° C).
