We combine in a bowl the sifted flour and cubes the chopped butter. Rubbing your hands. Add in the dough vanilla sugar, soda and mashed cottage cheese. We mix it well. Knead the dough until it stops sticking to your hands. Roll out the resulting dough into a thin (~ 3 mm thick) layer. When rolling it is desirable not to pour the flour, otherwise the dough can become too hard. From the rolled up dough with the help of a glass we cut out preparations of the round form. One side of the round billet is gently dipped in sugar. We fold our circle in half so that the sugar-coated portion is inside. We again dip one side of the billet into sugar. Add the sugar side inside again, after which we again dip one side of the billet into sugar. For clarity, look at the photo. As a result, you should get a quarter of a circle with sugar on all internal surfaces and on one external. We put the resulting blanks on a baking tray, covered with parchment paper, sugar side up. We put in the oven, heated to 180 degrees, and bake for 25-30 minutes. After the agreed time of 25-30 minutes, we take out the finished biscuits from the oven and cool it. Done!
