Sift into a bowl of flour (rye and wheat), yeast and salt. We pour 325 ml of warm water into the mixture. We knead from the resulting mixture of elastic and non-sticky dough. From the resulting test, we form an oblong loaf. We put the loaf on a baking sheet, lightly sprinkled with flour, and let it stand for 20 minutes, after which the top of the loaf is lightly greased with olive oil.
