Arabian dessert Kataef is one of the popular sweets in Arabic cuisine. Usually this dessert is prepared for Ramadan, but not only. A lot of fillings make this dessert attractive. Custard in pancakes is light and fragrant. Of course, in the recipe you will not find either eggs or fats. The basis for dessert is small pancakes. They are glued in the form of a bag, filling with stuffing - custard. This dessert is prepared quickly.
Ingredients:- Wheat flour 1 tbsp.
- Water 100 ml
- Baking Powder 2g
- Sugar 1 tsp.
- Dry yeast 0.5 tsp.
- Milk 1 tbsp.
- Fruit Syrup 10 ml
- Sugar 75 g
- Water 60 ml
- Corn starch 90 g
- Cream 200 ml
- Milk 1 tbsp.
- Bread white 3 g
- Step 1 To prepare a dessert, you need to take flour, milk, water, yeast, baking powder, sugar for the dough; for cream: milk, cream, starch, water, sugar, fruit syrup, white bread without peel.
- Step 2 Start with the preparation of the cream. 3-4 pieces of a loaf crumble (without a peel) on very small lumps.
- Step 3 Mix milk, cream, sugar. Put on a slow fire.
- Step 4 Add the bread crumbs to the hot milk. Cook stirring until the crumbs dissolve in the milk.
- Step 5 In 3 tablespoons of cold water, dissolve 3 tbsp. l. starch. Pour a thin trickle into the milk mixture.
- Step 6 Stirring to cook until thick.
- Step 7 Remove the thickened cream from the heat and transfer it to another dish. Periodically stir, cool, add fruit syrup and stir.
- Step 8 Cover the cooled (stick) food film so that the crust does not form. Put in the refrigerator for 1 hour for complete cooling.
- Step 9 Prepare pancakes. Pour 0.5 teaspoon dry yeast and 1 tsp. sugar 100 ml of warm water. Leave for 5 minutes until the yeast and sugar are completely dissolved.
- Step 10 Pour the yeast mixture with milk.
- Step 11 Add the flour mixed with the baking powder. Stir to avoid lumps.
- Step 12 Let the dough rest for 20 minutes so that the yeast reacts with the sugar.
- Step 13 Bake pancakes in a dry frying pan with non-stick coating only on one side! The sign of the pancake is completely dried (without damp spots) the top layer.
- Step 14 Lay the pancakes one by one so that they do not stick together.
- Step 15 The reverse side of the pancake should be rosy, but not burnt. It depends on the amount of sugar in the test.
- Step 16 Fold the pancakes not fried side inward and blind the edges to the middle.
- Step 17 Frozen pancakes filled with open cream. Sprinkle with ground nuts, chocolate. Serve for coffee and tea for dessert.
