Remove the zest from two lemons. Squeeze the juice into 2/3 cup. In a large saucepan bring to a boil on high heat 5 1/2 glasses of water and lemon zest. Add the lavender. Close the pan, reduce heat and cook for 10 minutes. Place a large sieve over a jar prepared for a drink, or use gauze. Pour the drink into the vessel, draining it. Press lavender and zest to extract more liquid. Add the lemon juice. Allow to cool completely for about 45 minutes. Fill the four high glasses with ice. Pour the drink and serve immediately.
