Cupcakes with poppy seeds These small curry cupcakes are now very popular in Russia and Ukraine. To us, the muffins came from America, where they, in turn, came out to the broad masses in the late 50s of the last century. They do look a bit like cupcakes that are familiar to our person, however, they differ from them in the texture of the finished baking - the muffins are more airy and tender. Muffins are sweet with a variety of fillers - it's spices, numerous fruits and berries, dried fruits and candied fruits, raisins and nuts, chocolate drops, confiture and jam. And unsweetened - with cheese, ham, vegetables, mushrooms, meat or fish. Try to cook amazingly delicate sweet muffins with the taste and aroma of an invigorating lemon!
Ingredients:- Wheat flour 3 tbsp.
- Eggs chicken 2 pcs.
- Lemon 1 pc.
- Yoghurt 375 ml
- Poppy 2 tbsp. l.
- Sugar 1 tbsp.
- Soda 6 g
- Butter 200 g
- Salt 6 g
- Baking powder 2 tsp.
- Sugar powder 1 tbsp. l.
- Step 1 For the preparation of muffins we need: wheat flour, butter, eggs, sugar, natural yoghurt, lemon, poppy, baking powder, soda, salt.
- Step 2 Mix all the dry ingredients in one bowl: flour, baking powder, soda, salt and poppy seeds.
- Step 3 In another dish, melt the butter, add the sugar and whisk everything with a mixer until the mass is whitened.
- Step 4 In the oil mixture, one beat 2 eggs - after each beat the mixer a little.
- Step 5 Wash lemon and hold for 5 minutes in boiling water to make it fragrant. Then grate the grated zest. Add 1 tablespoon lemon zest to test 1.
- Step 6 Now visually divide the whole yogurt and the entire dry mix into 3 parts. Put in a dough 1/3 part of yogurt - and quickly mix or whip with a mixer (it is not necessary to whip for a long time).
- Step 7 Add 1/3 of the dry mix again - whip it quickly with a mixer or mix. Repeat steps 6-7 2 more times until you run out of yogurt and dry mix.
- Step 8 The dough for muffins is ready. Leave it for 10 minutes.
- Step 9 In the meantime, put the paper mills in the muffin mold (you do not need to lubricate them) or smear the shape with butter.
- Step 10 Each mold should be completely filled with dough.
- Step 11 Bake muffins in the oven at a temperature of 180-190 ° C for 25-30 minutes. Mix 3 tbsp. l. lemon juice with 1 tbsp. l. of powdered sugar. This syrup is applied from above with a culinary brush on warm muffins. Finished and lubricated with syrup muffins leave to cool, and then remove from the mold.
