From pancakes they are distinguished by the fact that they are thick, like pancakes, and from pancakes - that they are baked on a lightly oiled frying pan or without oil at all. Another difference punkeyk - different fillers. If the filling is wrapped in our pancakes, then here it is put in the dough. Unlike our unsweetened pancakes with fillers such as zucchini, pumpkin, green onions, punkcakes are added fruits, berries, chocolate drops, nuts, coconut chips, etc. In this recipe, ricotta and orange peel are added to the dough. It would be wasteful to use Italian ricotta in the test, so I took our Russian counterpart. I think that it is quite possible to replace ricotta with ordinary curd. Pancakes are larger than pancakes, but fewer pancakes, so you need a large frying pan or, conversely, a small one. The frying pan is smeared with oil only slightly. If the brown color of baked pancakes does not embarrass you, you can bake and generally without oil in a pan with non-stick coating.
Ingredients:- Wheat flour 1 tbsp.
- Milk 0.5 tbsp.
- Eggs chicken 2 pcs.
- Salt 0.5 tsp.
- Sugar 2 tbsp. l.
- Baking powder 1 tsp.
- Orange 1 pc.
- Sunflower refined sunflower oil 3 tbsp. l.
- Ricotta cheese 200g
- Step 1 For pancakes, we need to prepare the following ingredients: flour, ricotta, milk, sugar, salt, baking powder, eggs, orange to peel and a little sunflower oil to lubricate the frying pan.
- Step 2 We rub the peel with the orange, do not forget to wash it thoroughly with hot water and dry it.
- Step 3 Spread into a bowl of ricotta, eggs, sugar, salt, pour in the milk and mix everything with a whisk.
- Step 4 Add the flour mixed with the baking powder, and knead the dough, similar to the fritters. If it turns out densely, you can add a couple of spoonfuls of milk. We do not break the flour balls, we do not knead the dough for a long time and we definitely give the test 30 minutes to rest.
- Step 5 Lightly oil the frying pan with oil, pour the dough and bake it over a small fire until the bubbles and holes appear on the surface. This is a signal that the punkake needs to be turned over.
- Step 6 Fry the other side and add pancakes into a pile on the plate.
- Step 7 Usually pancakes are served with maple syrup, on holidays - with cream and berries, but you can use our traditional additives: honey, jam, butter, sour cream!
