Pies on sour cream The people have long been loved not only large, but, on the contrary, small-bodied apple varieties such as chinens, often called paradise apples. These apples are famous for the fact that they cooked jam unsurpassed to taste. Why in the past tense? And because the cultivation of such a variety of apples is now quite a rare phenomenon. If, suddenly, you have to buy such apples, try not only to cook the famous jam, but also to bake pies with a wonderful filling of small apples. Our pies will be in the form of a bag. If you do not find heavenly apples, bake pies with stuffing from ordinary apples on this recipe.
Ingredients:- Flour, wheat 450 g

- Sour Cream 300 g
- Baking powder 4 g
- Salt 4 g

- Milk 50 ml
- Step 1 To make cakes, you need to take flour, sour cream, eggs, salt, sugar, baking powder for the dough. For the filling, take the paradise apples, egg white, sugar and starch. You need to mix the yolk with milk to spread the pies.
- Step 2 Mix the sour cream with one egg and one egg yolk.
- Step 3 Sift the flour, add salt, baking powder and sugar to the dry mixture. Mix.
- Step 4 Add the sour-egg mixture to the dry mixture. Mix. Knead the elastic soft dough.
- Step 5 Roll it into a ball. Cover with a foil. Put it in the refrigerator for 1 hour.
- Step 6 In the meantime, prepare the filling. Thoroughly wash the apples (I used a small brush). Trim the stems. Blanch for 1 minute. Immediately drop into cold water. Dry it on a paper towel.
- Step 7 Cut the fruits in half. Clear. Fill 3 tablespoons of sugar.
- Step 8 Whisk 1 protein with 2 tablespoons of sugar. Beat to steady peaks. Gently mix proteins with apples.
- Step 9 Sprinkle top 1 st. l. cornstarch. Mix gently. The filling is ready. Heat the oven to 180 ° C together with the pan.
- Step 10 Divide the dough into 2 parts. Roll each of them into a rectangle. Cut into squares measuring 10x10 cm.
- Step 11 Stuff the dough with a sweet apple blend. Collapse the pie in the form of a pouch. Tie the top with linen thread.
- Step 12 Put the cakes using baking paper on a hot baking sheet. Bake for 40-50 minutes.
- Step 13 10 minutes before the end of baking, grease the pies with a mixture of yolk and milk.
- Step 14 Remove the pies. Cool it down. Serve with milk. Decorate cakes according to your desire - chocolate, icing, sugar powder and nuts.
