Pico de Gaio Sauce

Mexican sauce Pico de Guyau sauce, also known as salsa fresca, is very popular in Mexico, where it is served with wheat and corn cakes with various fillings. Traditionally, the sauce is prepared with the addition of cilantro, but I prefer parsley. It is also possible to add cucumber, radishes, mangoes, fresh chili peppers, avocados and much more. In each region of Mexico there is a variant of Pico de gallo, which is unusually good in combination with meat and potatoes.
