- potatoes - 2.2 Kilogram
- of egg yolks - 8 pieces

1. Pre-cook the potatoes until cooked. Cut into cubes. Preheat the oven to 190 degrees. Put the boiled potatoes on a baking tray and put in the oven for 10-15 minutes to lightly dry it. 2. Take the potatoes out of the oven and knead to a consistency of mashed potatoes. Allow to cool in a bowl for 5 minutes. Add egg yolks, butter, a couple of pinch of salt, a pinch of pepper, a pinch of nutmeg and 3/4 cup of cream. 3. Mix with a rubber spatula. Add extra salt, pepper and nutmeg to taste. 4. Put the potato mixture in a large confectioner's bag with a star-shaped tip and squeeze the mashed potatoes onto the baking tray, moving in a spiral. 5. Beat 1 egg with 1/2 cup of thick cream and gently grease the resulting potato mixture with a brush. This will be much easier if you pre-deliver the potatoes in the refrigerator for about half an hour. 6. Bake the potatoes in the oven at a temperature of 190 to a golden color along the edges. Serve on a large platter.
