Delicate soup This delicate and at the same time hearty soup-puree will please you and your loved ones and will not require much time. The key ingredient is a pumpkin, a traditional autumn vegetable perfectly in harmony with the Indian mixture of curry seasonings. Prepare this soup can even the most inexperienced mistress (checked repeatedly), the recipe quite admits deviations both in time and in ingredients. The main thing to adhere to the basis: pumpkin-curry-cream plus a good mood!
Ingredients:- Pumpkin 300 g
- Curry 1 tsp.
- Pepper red ground 0.25 tsp.
- Bread white 200 g
- Olive oil 3 tbsp. l.
- Cream 250 ml
- Onions 1 pc.
- Carrot 2 pcs.
- Potatoes 3 pcs.
- Salt 1 tbsp. l.
- Step 1 To prepare the soup, wash and peel the carrots, potatoes and onions. Pumpkin also peel off the skin and seeds, so that the juicy pulp remains 300 grams. If there is no cream - fat milk will do. Any fresh greenery can be used for decoration.
- Step 2 Finely chop the onions, carrots grate on a large grater. In a frying pan, heat the oil, put onion and fry until light golden color. Then add the carrots, stir and fry for another 5 minutes.
- Step 3 In a saucepan, boil 1.5 liters of water, season with salt, place fried onions with carrots and cook for about 5 minutes.
- Step 4 Cut the potatoes and pumpkin into large cubes. In the soup with onions and carrots put the potatoes, cook for 10 minutes, then put the pumpkin and all together cook for 5 more minutes. Then remove the soup from the fire and allow to cool slightly.
- Step 5 Chop the cooled soup with a blender in a puree. If there is no blender - the soup can be wiped through a sieve. The resulting mashed potatoes are put on the fire, add cream, season with ground red pepper and curry, and bring to a boil. Serve the soup with croutons and greens.
