1. Pear peel and cut into small cubes. Chop the pieces of chocolate. Preheat the oven to 175 degrees F. Lubricate the cake pan and sprinkle with breadcrumbs or flour, set aside. 2. Sift the flour, baking powder and salt together in a bowl, set aside. Using a mixer, whisk eggs in a bowl at high speed for at least 5 minutes. Melt the butter in a medium medium saucepan and cook it until the oil turns brown and gets a nutty smell, about 6 to 8 minutes. Remove oil from heat and keep in a warm place. Beat sugar and eggs in a separate bowl. Add the flour mixture and brown oil in the following sequence - one third of the flour, half the butter, one third of the flour, the remaining butter and the remaining flour. Whisk at low speed for 1 minute, and then gently stir the dough with a spatula. 3. Pour the dough into the prepared form. Sprinkle with pieces of pear and chocolate. Bake the cake until golden brown, from 40 to 50 minutes. 4. If desired, sprinkle the pie with powdered sugar. Serve with whipped cream.
