Prepare all the necessary ingredients for preparing a salad with rice noodles. Eggplant, pepper, lettuce, cucumber cut into beautiful straws. Cut the olives in half. In a frying pan warm up the vegetable oil. Fry it in spices, then add sliced eggplant. We thoroughly salt, stirring, roasting under the closed lid until it is ready. While the eggplants are frying, we will cook the rice noodles according to the instructions. To do this, we will soak the noodles in water for 10 minutes, then throw it into boiling water for 3 minutes, and then thoroughly rinse in cold water. Of all the ingredients, we will collect the salad and prepare the dressing. To do this, mix the vegetable oil, lemon juice and sugar, and you can add a little soy sauce.
