The principle of making compote of dried apricots does not differ much from the recipe of any compote from dried fruits. So: 1. We sort through the apricot, clearing it of litter. 2. Put the apricot in boiling water, add sugar and cook for 20 minutes over low heat. 3. Remove the compote from the fire, add a little bit of citric acid to it, let it cool down - and serve, first straining through the cheesecloth. Enjoy your compotopia :)
