- food vinegar - 1/3 cup
- granulated sugar - 1 st. spoon (salt and pepper to taste)
- cucumber - 2 pieces (cut into cubes)
- tomatoes - 3 pieces (cut into cubes)
- red onion - 2/3 Cups (cut into cubes)
- fresh mint - 1/2 cup
- olive oil - 2 items. spoons
1) In a large bowl mix food vinegar, salt and granulated sugar. Add cucumber cubed and marinate for 1 hour, stir occasionally. 2) Cut into cubes tomatoes, onions, finely chop mint, add olive oil and add to pickled cucumbers. Salt and pepper to taste.
