In a large saucepan, heat the oil over medium heat. Add onions and garlic. Cook, stirring, until the onion is soft, from 5 to 7 minutes. Add garam masala, cook, stirring, until the aroma appears, about 1 minute. Add broth, bring to a boil. In a few visits fill the pan with spinach. Fry by adding more spinach, as soon as the place appears, 2 to 3 minutes. Season with salt and pepper. Reduce the heat to low, simmer until soft spinach, until most of the liquid evaporates, about 30 minutes. Remove from heat and gently mix with tofu and yoghurt. Serve with brown rice.
