Throw squid on a heated frying pan (without liquid or fat) and fry for a minute, stirring quickly. Transfer to the plate. Then, in the same pan, put half of the oil, add parsley and garlic, fry quickly stirring until the garlic becomes transparent. Add squid, wine and seasonings to taste. Add the remaining oil, stirring quickly over a large fire. Wait for some of the sauce to evaporate and serve immediately. The whole process of cooking takes place on high fire and should not take more than 2-3 minutes.
