The trend for desserts from the brewed dough is gaining momentum. And what about delicious snacks? Delicate baskets with airy creamy stuffing, pieces of red fish and fresh herbs are a great idea for a New Year's party.
Ingredients
- Water - 250 g
- Butter 82.5% - 100 g
- Flour 150 g
- Sugar and salt - 5 grams each
- Eggs - 3 - 5 pieces, depending on the size
- Curd cheese, red fish and greens - for filling
Cooking method
- Melt the butter in water, bring the mixture to a boil
- Add flour to the saucepan
- Leaving the saucepan on fire, mix the mixture until a white layer appears on the bottom
- Introduce into the brewed egg mass one by one, carefully whisking with a mixer
- The dough should become homogeneous (without grains) and smooth
- Put the dough into a pastry bag with a 10 mm nozzle and put it in the refrigerator for a few hours
- Put small hemispheres from the bag on the parchment. You can also use a round spoon
- Bake the billets in the oven, heated to 170 degrees, until a ruddy crust appears
- Combine cheese cheese with chopped greens. Half-spheres cut in half, stuffed with cheese and add pieces of fish
- Serve with hot dishes or as an aperitif
