- flour - 2 cups
- baking powder - 1 st. a spoon
- salt - 1 1/2 teaspoons
- chilled butter - 12 items. spoons (1 1/2 sticks)
- chilled buttermilk - 1/2 cup
- chilled big egg - 1 piece
- Cheddar Cheese - 1 cup
- egg - 1 piece (for lubrication and sprinkling)
- water or milk - 1 st. spoon (for lubrication and sprinkling)
- sea salt - To taste (optional) for lubrication and sprinkling)
1. Preheat the oven to 220 degrees. Mix the flour, baking powder and salt in a bowl. Add the chilled butter to chopped pieces and mix with a mixer at low speed until the mixture looks like large crumbs. 2. Mix buttermilk and egg in a small measuring cup, lightly beat with a fork. Add the egg mixture to the flour mixture and whip the mixer at a low speed. 3. In a small bowl, mix the grated Cheddar cheese and a small handful of flour. 4. Add cheese to the dough and mix at a low speed. 5. Put the resulting dough on a well-floured surface and knead well 6 times. Roll the dough into a rectangle measuring 12X25 cm. 6. Pour the flour into the dough along the half and then across to get 8 rectangles. You can make 12 smaller rectangles. 7. Lay the cookies on a baking sheet lined with parchment paper. Beat the egg with 1 tablespoon of water or milk. Using a brush, grease the biscuit with an egg mixture. Sprinkle with sea salt, if used. 8. Bake in the oven for 20-25 minutes until the cookie is browned. Serve hot or warm.
