Christmas guinea-fowl

The guinea fowl is washed thoroughly, rubbed with salt and left. On chestnuts we make cruciform incisions. We throw them into boiling salted water. Bring to the boil again, cook for about 5 minutes on a rapid fire, after which we roll the chestnuts with ice water. Now we can easily clean our chestnuts from the shell. Pumpkin, without peeling the peel, cut into slices. Grease the baking tray with oil, lay on it a slice of pumpkin. Sprinkle with lemon juice, lightly sprinkle with sugar - and into the oven for 1 hour at 160 degrees. After an hour we take our baking sheet out of the oven. In the center of the baking sheet lay the guinea fowl stuffed with branches of rosemary and cut into four parts mandarin. The rest of the mandarins are cut in half and laid around the guinea fowl. Sprinkle the whole thing with spices. Guinea fowl is covered with foil, and put the baking tray in the oven for another hour at the same temperature. In the meantime, guinea fowl is baked in the oven - we will cover the glaze. We will squeeze out the juice from the three remaining mandarins into the scoop. We add honey to the scoop, a little salt, a couple of branches of rosemary. We put it on the fire - and weld it to a thicker consistency. The coating of the pumpkin and guinea fake is ready. In a frying pan, put 4 tablespoons of sugar and a little lemon juice. Warm up, put chestnuts and sesame seeds in the pan. Stir and fry for a couple of minutes over medium heat. We take the baking tray from the oven. Pumpkin and guinea fowl with the mandarin glaze we have prepared. We also put roasted chestnuts on a baking tray. We put the pan back in the oven and bake for another hour at the same temperature. We serve all this business on a large platter or pan, in the same form as everything was baked in the oven - without throwing anything away. Everything is edible and very tasty. Bon Appetit! :)
