Corn muffins with Cheddar cheese

1. Preheat the oven to 220 degrees. Generously grease olive oil with a muffin shape with 12 compartments and set aside. In a small bowl, combine the flour, corn flour, sugar, baking powder, salt and soda. 2. Make a groove in the center of the flour mixture. Add the egg, buttermilk, melted butter, corn and chopped onions. Stir until a homogeneous consistency is obtained. 3. Then add grated Cheddar cheese and mix well. 4. Spoon the corn dough into the prepared muffin mold. Put the form in a heated oven and bake for 10-15 minutes until the top is slightly golden in color. 5. Allow to cool in the form for a few minutes, then remove from the mold and allow to cool completely on the stand. Serve muffins with melted butter. Muffins can be stored in an airtight container for one to two days.
