Spicy soup of carrots Soup puree and cream soup is useful because it is quickly absorbed. In addition, such types of soups are considered dietary, and therefore easy. This is very appropriate in the summer, because in the heat of fat to eat are not recommended. But all the vegetables and fruits have ripened and are ready to give away their vitamins. Soups are boiled salty and sweet, served both hot and cold. There is a huge number of soups and the same number of recipes in which ingredients are grinded, that is, soups-mashed potatoes. And here it is worth to thank the technological progress, because thanks to it the ingredients are ground - they are mere trifles. In difference from the old times, when vegetables were rubbed on a sieve and it took a lot of time and effort. This time we made carrot soup. And in order to give spices and piquancy to taste, thyme and cinnamon were added to it.
Ingredients:- Carrots 500 g
- Onion 4 pcs.
- Potatoes 250 g
- Parsley fresh 0.25 bunch
- Green onion 0.25 bunch
- Sunflower refined oil 1 tbsp.
- Garlic 4 denticles
- Butter 50 g
- Thyme (Thyme) dry 0.25 tsp.
- Cinnamon ground 0.5 g
- Bay leaf 3 pcs.
- Sugar 1 tbsp. l.
- Pepper black ground 4 pinch
- Salt 1 pinch
- Step 1 For such a soup, such ingredients will be needed: carrots, potatoes, onions, garlic, butter, greens, ground cinnamon, dried or fresh thyme.
- Step 2 All vegetables should be peeled and chopped.
- Step 3 Half the onion is chopped, the second half will be needed later.
- Step 4 The number of products is indicated for a pot of 1.5 liters. Put potatoes, carrots, onions and garlic in a pot. Pour boiling water and a little salt. Boil.
- Step 5 Then add bay leaf, cinnamon and thyme. Boil for 30 minutes on low heat.
- Step 6 Remove the bay leaves from the soup. Grind all the ingredients with a blender.
- Step 7 Add a generous piece of butter, salt and pepper to taste. Put on low heat for another 10 minutes.
- Step 8 The remaining onion finely chop with a knife.
- Step 9 In a heated frying pan pour 1 tablespoon vegetable oil (refined). Add chopped onion and sprinkle with sugar.
- Step 10 Fry until the onion is covered with glaze and get a golden hue.
- Step 11 A few chopsticks of parsley and a green onion pen finely chopped.
- Step 12 Pour the soup-puree over the plates. Add the fried onion and sprinkle with herbs. In this form, serve to the table.
