Cupcakes with berries If you have fresh or frozen cranberries, cranberries, blueberries or other small strong berries, then try baking cupcakes from coconut dough with them. In general, the dough from these ingredients is universal: you can prepare it according to the principles of cupcakes, that is, whisking the ingredients to homogeneity, or you can by the principles of muffins, that is, mix "dry" and "raw" ingredients separately and then quickly connect them together to they just grabbed. I prefer to make coconut chips myself and more often as an additional product in the process of preparing coconut milk. I buy a coconut, split it, clean it, chop the white part, then pour it with boiling water, after half an hour filter and get 2 products: coconut milk and coconut shavings. If you use frozen berries, it is recommended that they be rolled in flour before adding to the dough.
Ingredients:- Kefir 1 tbsp.
- Wheat flour 3 tbsp.

- Baking Powder 10g
- Sugar 150g
- Coconut shavings 150 g

- Step 1 To prepare coconut cupcakes with berries, prepare the flour, coconut shavings, baking powder, kefir, eggs, butter, sugar and 1 cup of cowberry.

- Step 5 Carefully add the berries to the dough and mix.
- Step 6 Spread the dough on greased or silicone molds, place them in a warm oven and bake at 180 ° C for about 20-25 minutes. The time depends on the size of the molds and the properties of the oven.
- Step 7 Finished cupcakes in a few minutes, remove from the molds. If desired, the cooled cupcakes can be sprinkled with powdered sugar, glaze or decorate to your liking.
