Green fusilli Vegetable sauce from green peas, broccoli and green beans has a rich green color, very appetizing and aromatic, useful, unusual and just a find for lovers of green vegetables! Pasta with such a sauce becomes impregnated with it, becomes green, acquires a characteristic taste and aroma! Useful, beautiful and incredibly delicious!
Ingredients:- Fusilli 350 g
- Butter 50 g
- Onions 1 pc.
- Garlic 1 clove
- Frozen string beans 70 g
- Frozen peas 70 g
- Broccoli cabbage 120g
- Salt 0.5 tsp.
- Cream 100 ml
- Step 1 We need fusilli (spirals), green peas, green beans, broccoli, onions, garlic, cream 15%, butter and salt to prepare the "green" paste.
- Step 2 In a large saucepan boil water, about 2 liters. We throw salt, vegetables (peas, broccoli, green beans) into the water, mix it, mix it for a couple of minutes and immediately transfer it to ice water for 10 seconds.
- Step 3 We merge the water, and transfer the vegetables to the blender bowl.
- Step 4 Whisk at high speed for a few seconds to get a more or less homogeneous vegetable puree.
- Step 5 We clean the onion, grind it. In a frying pan, melt the butter, fry the onion until it is transparent.
- Step 6 Pour the cream into the frying pan, shift the green vegetable puree from the blender bowl, add a little salt.
- Step 7 Mix and simmer on a slow fire, periodically mixing.
- Step 8 While preparing the sauce, boil until ready in salted water fusilli, drain the water.
- Step 9 From the frying pan, turn the sauce back into the blender, whisk until smooth for a few seconds at high speed.
- Step 10 Put the sauce in a saucepan over the pasta.
- Step 11 Mix thoroughly so that each spiral is covered with sauce. We serve such a paste in hot form immediately after preparation!
