Grillage (French grillage) - French delicacy from fried nuts with sugar. Grillage is an excellent recipe for homemade dessert for the holiday and for every day. The assortment of the grill is varied, but there are two main types - a hard and soft grilling. Soft grilling is a combination of crushed nuts with fruit mass, and a hard grilling is a mixture of melted sugar and roasted nuts. Grillage is an excellent alternative to sweets, toffee and other confectionery, and for its preparation, a minimum of ingredients is required. Keep the grill between the layers of waxed paper. It can be used on its own, with ice cream or sandwich two plates of paraffin's grill. Be careful when pouring hot sugar mixture on the baking tray, so as not to burn yourself. The color of the sugar mixture (and not the temperature) is the best indicator of readiness. The darker the color, the more bitter it will be. Try to remove the grill from the fire when it is golden-honey colored. If the pan is too dark to judge the color of the caramel, gently take a small amount of the mixture with a spoon and place it on a sheet of white paper - the level of caramelization will become evident. Preparation: Cut and fry almonds. Mix sugar and water in a medium saucepan with a thick bottom. Be careful not to splash the sides of the pan. Cook over high heat, stirring, until the sugar dissolves. Using a clean confectionery brush, moistened in water, brush off the grains of sugar from the edges of the pan. Prepare the sugar mixture on high heat until light-golden, about 10-15 minutes. Do not leave the pan unattended. Remove the saucepan from the heat and gently mix it with chopped almonds. Immediately pour the mixture into a mold or on a baking tray, sprinkled with oil. Allow to cool completely and break into pieces. Store the grill in an airtight container for up to 5 days.
