We prepare manti with a pumpkin Manty with a pumpkin - a traditional Uzbek dish with fine taste qualities, which for certain will be appreciated by fans of a pumpkin. In addition, a steamed pumpkin is very useful. In the classic recipe, fattened lard is used - the product is rather rare, so I replaced it with butter, which is quite acceptable and not less tasty. I also allowed myself some freedom in relation to spices and took my favorite, it was in combination with a pumpkin, not the Uzbek mix of "hops-suneli", it turns out very tasty. Curry powder is also suitable here. As a sauce, sour-milk products, mixed with salt, cumin and greens: Katyk, yoghurt or sour cream, are excellent for this dish.
Ingredients:- Eggs chicken 1 pc.
- Water 320 ml
- Flour, wheat 650 g
- Salt 1 pinch
- Pumpkin 900 g
- Salt 1 pinch
- Onion 250 g
- Garlic 4 denticles
- Hop-schnel mixture 10 g
- Pepper black ground 1 pinch
- Butter 70 g
- Step 1 Prepare the main ingredients: dough, pumpkin, butter, spices, onions and garlic.
- Step 2 You can prepare the dough in advance. For this, sift the flour into the cutting board. Make a deepening in the middle, drive in the egg and gently pour in the water, add salt.
- Step 3 Begin mixing the dough. First with a fork.
- Step 4 And then proceed to mix with your hands.
- Step 5 The result should be a smooth, elastic dough. Roll it into a bowl, cover with a food film and put it in the refrigerator. Before cooking, take out the dough and place it at room temperature for 30 minutes.
- Step 6 Clean the pumpkin, garlic and onions.
- Step 7 Cut the pumpkin into small cubes, onions - small pieces, chop garlic finely. Also add spices: salt, black ground pepper and hops-suneli.
- Step 8 Melt the butter and add hot to the filling. Mix well.
- Step 9 Roll out the dough about 2 mm thick, and cut into squares.
- Step 10 Put a serving in the middle of each square.
- Step 11 Connect the corners of the square in the middle, then blend the dough on the diagonals to make an envelope.
- Step 12 Make small "ears" on both sides for better steam circulation during cooking.
- Step 13 Do the same with the rest of the dough and stuffing. From the obtained amount of ingredients, 30 pieces of medium or 20 large mantles are obtained. Boil the mantles in a double boiler or special saucepan for 35 minutes.
- Step 14 Finished manti served hot with sauce and greens.
