Fill a large bowl of ice and water, set aside. Place orange juice, sugar and ginger in a small saucepan, bring to a boil over medium heat. Boil over low heat, stirring until the sugar dissolves and the syrup thickens, about 15 minutes. Remove from heat, pour the syrup into a bowl, add Cointreau, mix. Put the bowl in a bowl of ice or in a refrigerator until it cools. Using special knives of different sizes, cut balls from honey and canary melon. Put the balls in a bowl, add 1/2 cup cold syrup and orange peel. Mix. Before serving, lay the melon slices on the dish. Top with melon balls. Pour the syrup and decorate with mint. Serve with orange biscuits, melon balls and the remaining syrup.
