Okroshka or Russian cold soup Russian cold soups are unusually original. Prepare them for kvass and various vegetable broths. Particularly popular both in Russia and nowadays are okroshki. They are prepared not only from vegetables alone, but also add various meat products or fish. For okroshki used specially prepared okroshechny kvass, which is less sweet than kvass and concentrates sold in the store. All ingredients for okroshki cut very finely. Serve ice cold, with boiled or fried potatoes. Prepare okroshka in winter and taste the taste of summer!
Ingredients:- Salt 1 tsp.
- Sugar 20g
- Mustard 40 g
- Ham 350 g
- Kvass bread 1.5 liters
- Green onion 170 g
- Cucumber 250 g
- Sour cream 3 tbsp. l.
- Eggs chicken 2 pcs.
- Fresh dill 40 g
- Potatoes 200 g
- Step 1 To prepare meat okroshki you need to take okroshechny kvass, ham, potatoes, fresh cucumbers, green onions, eggs, dill greens, prepared mustard, sour cream, sugar and salt.
- Step 2 Cut the ham into small cubes.
- Step 3 Pour the potatoes in the peel with hot salted water and boil until soft, and then drain, cool, clean and also cut into small cubes.
- Step 4 Eggs should be poured cold water, boil for 10 minutes (counting from the beginning of boiling the liquid), dip into cold water, then clean and separate the proteins from the yolks. Finely chop the egg whites.
- Step 5 Yolks grate on fine grater, add to them mustard, a little salt and sugar.
- Step 6 Grind the mixture to uniformity.
- Step 7 Rinse the green onion in running water, dry and chop with thin rings.
- Step 8 Grate the onion lightly with salt.
- Step 9 Peel the fresh cucumbers from the skin (if it's rough), cut it into four pieces and finely chop.
- Step 10 Fold all the prepared foods in a bowl.
- Step 11 Ingredients mix and dilute with kvass.
- Step 12 Put the sour cream and the chopped dill into the okroshka.
- Step 13 Mix and cool the bowl.
