Parfait from papaya, berries and yogurt

In a small bowl, mix the yogurt, 3 tablespoons of honey and zest. Set aside. Grate a large bowl of ginger in a small bowl. Wipe through a fine sieve to get a total of 1 tablespoon of ginger juice. Add the remaining 2 tablespoons of honey and lemon juice to the bowl with ginger juice. Mix with whisk. Add papaya, blackberries, raspberries. Mix gently. Spread half the fruit mixture in 6 tall glasses. Sprinkle with chopped mint. Spread half the mixture of yogurt and half muesli. Lay out the remaining fruit mixture, yogurt and muesli. Decorate with mint sprigs and serve.
