Preparing "zrazy inside out" Already the very name of this dish says that it came to us from Polish or Lithuanian cuisine. Initially, the so-called rolls of battered meat with a filling, fried in hot oil. Over time, instead of pieces of meat began to use minced meat, and the filling in such "cutlets" could be very different - from finely chopped greens to vegetables, cheese or mushrooms. But if the stuffing can be put inside a regular meat cutlet, then why not do the same, but vice versa? Potato zrazy with mushrooms are just "zrazov inside out": in them the filling plays the role of mushroom stuffing, and the shell is mashed potatoes. Most likely, this dish was prepared for the first time by some Belarusian chef, because this people has a tender love for potato dishes. Or maybe the ordinary housewife did this when only potatoes and mushrooms were in the refrigerator. In any case, potato zrazy should be cooked, this is an excellent alternative to fried potatoes with mushrooms - the ingredients are the same, but the taste is completely different. Do not be discouraged if the recipe you are interested in, but there was no mushrooms available. You can make stuffing any other, even from the same minced meat, pre-fried with onions.
Ingredients:- Potatoes 800 g
- Sunflower refined sunflower oil 3 tbsp. l.
- Breadcrumbs 6 tbsp. l.
- Eggs chicken 2 pcs.
- Salt 2 pinch
- Pepper black ground 1 pinch
- Mushrooms champignons 300 g
- Onions 1 pc.
- Sunflower refined sunflower oil 2 tbsp. l.
- Pepper black ground 1 pinch
- Salt 1 pinch
- Sour cream 7 tbsp. l.
- Fresh dill 0.5 bunch
- Garlic 3 denticles
- Step 1 For cooking, take potatoes, champignons, onions, sour cream, dill, garlic, egg, breadcrumbs, vegetable oil and spices.
- Step 2 Wash potatoes well, pour cold water and boil until cooked.
- Step 3 Peel the onions and finely cut into cubes.
- Step 4 Champignons washed, drained and cut into small cubes.
- Step 5 Finish the warm potatoes and peel them, add 1 egg, salt and black ground pepper to taste.
- Step 6 Preheat 2 tablespoons of vegetable oil and fry the mushrooms with onion until ruddy in 15-20 minutes over medium heat.
- Step 7 Add the salt and pepper to the mushrooms to taste, the prepared stuffing to cool.
- Step 8 From the potato to form a cake.
- Step 9 Put 1-2 teaspoons of the filling in the center.
- Step 10 Then wrap the potato cake tightly, giving it the shape of an oblong cutlet.
- Step 11 So prepare all the zrazy for roasting.
- Step 12 Then you can prepare sour cream sauce, combine sour cream, finely chopped dill and squeezed through the garlic press.
- Step 13 Preheat 3-4 tablespoons of vegetable oil in a frying pan. Beat with egg 1 egg and prepare breadcrumbs. Dip the zrazy in the egg, then in the rusks and fry over medium heat from two sides to a rosy color for about 1 minute.
- Step 14 Serve potato zrazy with hot sauce and cream sauce.
