Pumpkin is cleaned of seeds and peel, leaving only the flesh. We rub the flesh on a large grater. Nuts (I have hazelnuts) are ground in a blender. Yolks are rubbed together with sugar. Mix the grated pumpkin, whipped yolks, lime zest, lime juice (2 tablespoons) ground nuts. Stirring. In another container, whisk the proteins with salt, gradually adding the powdered sugar, to a strong foam. In the pumpkin mixture we sift the flour and baking powder. Gently stir the pumpkin mixture with whipped whites. The resulting dough is evenly distributed in the form for baking (I also added candied fruits on the photo, but this is not necessary). Bake for about 45 minutes at 180 degrees. Done!
