1. Finely chop the onions and mushrooms. Cut the Swiss cheese into 4 squares. In a small bowl, combine the mayonnaise, ketchup and cayenne pepper to a homogeneous consistency. Set aside. 2. Melt the butter in a large frying pan. Add onion and fry over medium heat for 5 minutes, stirring frequently. Add mushrooms and mix, then add wine (if used), 4 drops Worcestershire sauce, salt and pepper. Fry for a few minutes on medium heat until all the liquid has evaporated. Put the mushroom mixture in a separate bowl. 3. Mix the beef, cream, 4 drops of Worcestershire sauce, salt and pepper in a bowl. Form the cutlets, using one from 1/4 to 1/3 cup of the mixture. Make a finger groove in the center of each cutlet. 4. In the same frying pan, which was used to make mushrooms, melt 1 tablespoon of butter over medium heat. Add four patties and fry for 4 minutes, then turn over. Spoon the mushroom mixture on each cutlet, and then put 1-2 squares of Swiss cheese on top. Cover the frying pan with a lid and fry for another 2 to 3 minutes until the cheese melts. Finished cutlets keep warm and repeat the same with the remaining meat. 5. Half the buns for sandwiches roast in the oven. Pour the cooked spicy sauce. Put the cutlets with mushrooms and cheese between the two halves of buns and immediately serve with fried onions.
