- Butter - 60 Grams
- flour - 40 Grams
- lemon - 1/2 Pieces
- yolk - 1 piece
- broth or water - 1/2 Liters
- salt - 1/2 teaspoonfuls
Preparation: Melt half the butter in a saucepan, add flour and mix. Add cold broth or water, then take turns salt, pepper and yolk. Bring to a boil over low heat, whisking constantly. Remove from heat and add the remaining oil. Squeeze the lemon juice into the sauce and beat. The sauce is ready.
