1. Divide the egg yolks and proteins. Beat yolks with sugar in a thick mass. 2. Melt the chocolate in a bowl, mix with coffee. Place the bowl over hot water in order to facilitate mixing. Gradually add the butter. Repeat all the shakes to get a smooth cream. 3. Mix the chocolate cream with a mixture of sugar and yolks. 4. Whip egg whites with salt. Add 1 tablespoon of sugar and continue to beat for a couple of minutes. 5. Stir in about 1/3 of the egg whites into the chocolate mixture. Stir well, then add the remaining proteins. Serving: Send the mousse to the refrigerator for at least 2 hours. Dessert served with whipped cream or custard.
