1. Fill the pan with water, add salt and bring to a boil. Blanch pears and carrots for 30 seconds, then drain immediately drain the water. In a small bowl, mix the salt, sugar, chicken broth and cornstarch. Put it aside. 2. Heat the frying pan over medium heat. Add the vegetable oil. When the oil warms up, add shrimp and fry them for 1 minute. Add the grated ginger and continue frying for another 30 seconds. Then add the peas, carrots, pears and mix well. Fry for 1 minute. Shrimp should be lightly fried. 3. Pour the chicken broth mixture, mix and cook for a few more minutes until the shrimp is ready. Serve immediately.
